Mom's Salad Dressing for Macaroni or Potato Salad

"Summer's End"
  • 1/2 cup sweetened condensed milk
  • 3/4 cup mayonnaise
  • 1/2 cup lemon juice
  • 1/2 cup milk
  • 2 tablespoons spicy brown mustard
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried marjoram
  • 1/8 teaspoon black pepper

Gently stir into potato or macaroni salad: For potato salad, peel and boil and cool 4-6 potatoes, chop into rough dice.

  • Sprinkle in 1 bunch scallions or 1 small onion, chopped finely
  • 1 rib celery, chopped finely
  • 1/2 sweet pepper, chopped finely

For macaroni salad, use 2 cups elbow macaroni, cooked and drained.

  • Sprinkle in 1 bunch scallions or 1 small onion, chopped finely
  • 1 rib celery, chopped finely
  • 1/2 sweet pepper, chopped finely

There may be dressing left over. If you find that potatoes or macaroni absorb the dressing, you can always stir in a little more. The dressing will keep for a few days if refrigerated.
